Artichoke and pesto mozzarella stuffed veal and sweet potato fries and orange sauce

Ingredients

  • 2 x 200g slices veal
  • 160g mozzarella (Benna)
  • 1 tbsp green pesto (Camel brand)
  • 50g fresh breadcrumbs
  • 1 marinated artichoke
  • 1 large sweet potato
  • 1 orange
  • 25ml grenadine
  • 1 tsp honey
  • Bunch rocket
  • 1 tbsp balsamic
  • 2 tbsp olive oil (Borges)

Method

In a bowl dice the mozzarella, artichoke and mix with the pesto. Place the mozzarella mix on the veal and fold, cover with the breadcrumbs season well and shallow fry until golden brown. Cut the sweet potato chips and fry for 3 times allowing to cool between each time. In a small sauté pan caramelize the orange zest and honey add the grenadine orange juice and reduce. Toss the rocket in olive oil and balsamic and serve on the sweet potato chips with the veal on, drizzle with orange sauce.
