Almond crusted brie

Ingredients
- 2 Brie rounds (Emborg)
- 1 egg, beaten (Le Naturelle)
- 2 tbsp flour (Lamb brand)
- 4 tbsp fresh breadcrumbs (not dried)
- 2 tbsp flaked almonds (Lamb brand)
- Vegetable oil for frying
- 2 heaped tbsp cranberry sauce with port (Mackays)
- 1 tsp grated orange zest
- 1 tbsp orange juice
- 1 pear, hulled and thinly sliced
- Handful dressed salad leaves to serve

Method
Remove the 2 brie from their packaging and cut in half horizontally. Mix together the almonds and bread crumbs and season with salt and pepper. Dip the brie into the flour, then the egg, then the bread crumb mixture. Repeat the process again to double coat. Place into the freezer for 30 minutes before frying in hot oil. Meanwhile, place the cranberry sauce in a small saucepan with the orange zest and juice and cook together for two minutes. To serve, place the salad leaves into 2 deep bowls with the sliced pear, arrange the fried brie on top and serve the cranberry and port sauce on the side.
