All in one orange cake

Ingredients

For the cake
1 Large orange, cut into quarters and pips removed
200g Sugar (Lamb brand)
90ml Vegetable oil (Borges)
60ml Milk (Benna)
1 tsp Vanilla extract
3 eggs (Coccodi)
250g Plain flour
1 tsp Baking powder
For the orange cream
200g Cream cheese (Emborg)
200g Icing sugar
Finely grated zest 1 orange plus a little juice if necessary

Method

Place the orange, sugar, oil, milk and vanilla into a liquidizer and blend till silky and smooth. Next, add in the eggs and blend. Pour into a large bowl, sift in the flour and baking powder and mix just until it comes together (DO NOT OVER MIX) Place into a loaf tin lined with baking paper and bake at 180`c for 40-45 minutes. Allow to cool down completely. For the orange cream, blitz together the cream cheese and orange zest then beat in the icing sugar. Cut the cake in half, fill with the orange cream and serve.
