Classic crispy bacon and fried egg pancakes with maple syrup

Method
For the pancakes, mix together the flour, baking powder and sugar in a bowl. Crack in the eggs and melted butter and mix, adding in enough of the milk to make a thick smooth batter. Heat a little butter in a pan and fry dollops of the mixture on both sides for 1-2 minutes. Meanwhile, fry or grill the bacon until crispy. For the eggs, place a large greased ring into a small frying pan and break in 2 eggs. Fry sunny side up, 2 eggs at a time. To serve, place 2 pancakes on each serving plate. Top with 2 eggs, 4 slices of crispy bacon and a good drizzle of maple syrup.
