Fluffy pancakes with sweet whipped ricotta and berries

Ingredients

For the pancakes

  • 200g self-raising flour
  • 1 ½ tsp baking powder
  • 1 tbsp sugar
  • 3 eggs (Coccodi)
  • 25g melted butter plus extra for frying (Lakeland)
  • 200ml milk (Benna)

You will also need

  • 200 ricotta (Hanini)
  • 2 tbsp maple syrup or honey
  • 1 tsp lime zest
  • Fresh raspberries and blueberries
  • 1 scoop vanilla ice-cream (Carte D’or)
  • Icing sugar for dusting

Method

For the pancakes, mix together the flour, baking powder and sugar in a bowl. Crack in the eggs and melted butter and mix, adding in enough of the milk to make a thick smooth batter. Heat a little butter in a pan and fry dollops of the mixture on both sides for 1-2 minutes. Meanwhile whip together the ricotta, 1 tbsp honey/maple syrup and the lime zest together in a food processor till smooth. To serve, place 2 pancakes in each of your serving plates, sandwiching together with the whipped ricotta. Top with fresh berries, ice-cream, extra honey/maple syrup and a dust of icing sugar.
