Method

Roast the cherry tomatoes in the oven, drizzled with a little olive oil and salt and pepper. Warm up the waffle and place onto a serving plate. Whip the ricotta with olive oil and salt and pepper and spread over the waffle. Slice the avocado and lay on top with the roasted cherry tomatoes. Poach the egg in a pan of hot water with a little vinegar, drain and serve on top.
