Mini Cassatella jars

Ingredients
- 100g sponge cake
- 1 tub ricotta (Galbani)
- 3 tbsp. icing sugar (Lamb brand)
- 1 tbsp. chocolate chips
- Zest and juice 1 orange
- 1 tub fresh strawberries
- 2 tbsp. Amaretto or orange liqueur
- 100g marzipan
- You will also need 6 small jars for serving
Method
Beat the ricotta with a wooden spoon in a small bowl. Stir in the icing sugar, chocolate chips and orange zest. Mix the liqueur and orange juice together and put aside. Cut 18 small discs of sponge cake that fit the jars, push one in the bottom of each.
Brush the sponge cake with the liquor mixture and spoon over a little of the ricotta filling. Spoon in strawberry slices and cover again with another sponge layer. Repeat process. Cover the last layer of sponge with marzipan and chill before serving.
