Christmas tree cheese and salumeria board with homemade butter crackers

Ingredients
For the biscuits
- 200g plain flour (Lamb brand)
- 110g cold butter, diced (Valio)
- 1 tsp fine salt
- ½ tsp baking powder (Lamb brand)
- 1 egg yolk (Le Naturelle)
- Cold water to bind
For the different flavours:
- 1 tbsp. crushed black pepper and 1 tbsp. coarse sea salt
- Or 2 tbsp. chopped fresh rosemary plus 1 tsp garlic granules
- Or 25g grated parmesan cheese and 1 tbsp. sesame seeds
You will also need
- 1 block Vintage cheese, 1 block red Cheddar, 2 Brie, 1 Blue Cheese (Emborg)
- 175g whole premium export salami, 2 sliced serrano,2 sliced chorizo Pamlona (Emborg)
- 1 x 200g wedge Parmegiano (Zanetti)
- 1 large wooden board
- bunch green grapes
- 1 bunch fresh rosemary sprigs
- 100g walnuts (Lamb brand)
Method
Start by making the biscuits. Rub together the flour, baking powder, salt and butter to a crumb. At this stage, if you are adding in flavours do it now. Add in the egg yolk and enough water to bind into a pastry. Chill for 15 minutes then roll out thinly and cut out into rounds or squares. Prick with a fork and decorate the top with extra sea salt, pepper or Parmesan. Place onto lined baking sheets and bake at 200°C for 12-15 minutes until pale golden in colour. Allow to cool down completely. To serve, cut the cheese into slices or squares and arrange decoratively on the large board with the cuts of meats, grapes, walnuts and the butter biscuits
