Lebanese Shish Taouk with Fattoush
Serves: 2
Ingredients
For the shish Taouk
- 2 chicken breasts, cubed
- 2 tbsp Greek yogurt
- 21/2 tbsp tomato puree
- 2 cloves garlic, finely chopped
- Drizzle olive oil (Filipo Berrio)
- 1 tsp dried oregano
- ½ tsp mixed spice
- ¼ tsp cinnamon
- Pinch ground cardamom
- 1 onion, cut into cubes
- 1 red pepper, cut into cubes
For the Fattoush
- Cos lettuce leaves, cut into strips
- 1 red onion, sliced
- 1/2 cucumber, diced
- 2 tomatoes, quartered
- Fresh seasoning
- Fresh mint leaves
- Pitta bread, cut into squares and toasted
- Extra virgin olive oil and vinegar to dress
Method
Start this recipe by mixing together in a medium bowl the yogurt, tomato puree, drizzle olive oil, chopped garlic, herbs and spices and season well with salt and pepper. Add in the chicken cubes and allow to marinate for at least 2 hours. When you are ready to cook the chicken, alternatively thread the marinated chicken pieces with peppers and onions onto skewers. Heat a griddle pan with a little oil and fry the skewers on all sides till cooked through. When ready, prepare the fattoush by mixing all the ingredients together in a bowl. Serve the fattoush on the side with the chicken shish taouk.
