Lebanese Baba Ganouj

Ingredients

  • 1 large aubergine
  • 2 cloves garlic
  • 2 tbsp extra virgin olive oil (Filipo Berrio)
  • 1 tbsp tahini paste
  • 1 tbsp plain yogurt
  • Juice of a lemon
  • Fresh seasoning
  • Warm pitta bread, extra oil and paprika for serving

Method

Start this recipe by cutting the aubergine in half, place onto a baking tray and season with salt and pepper. Push in the garlic cloves, drizzle with a little oil and bake for 25-30 minutes until the flesh is soft. Allow to cool down completely. Scoop out the aubergine flesh and blitz together with the baked garlic, olive oil, tahini, yogurt and lemon juice to a puree. Serve drizzled with extra oil and a sprinkle of paprika and the warm pitta bread on the side.
