Pasta tossed in creamy chicken and spinach peanut sauce

Serves: 2

Ingredients

  • 3 tbsp roasted peanuts crushed
  • 2 chicken thighs, boneless
  • 1 red chilli
  • 1 tbsp grated Parmesan
  • 1 tbsp chopped sage
  • 200ml fresh cream
  • 50g butter
  • 2 cloves garlic
  • 1/2 leek
  • Bunch spinach
  • 200g dried pasta (Pas Di Martino)

Method

Cut the chicken in small strips and sauté on high heat in little oil, once well sealed lower the heat melt the butter and add the chopped leeks, garlic, chilli and nuts until browned. Now pour in the cream, cheese and sage, simmer until thickened and toss in the boiled pasta.
