Coconut crusted salmon with an apple curried sauce

Serves: 2

Ingredients

  • 400g salmon fillet
  • 50g salted butter
  • 100g oats (Quaker)
  • 2 tbsp desiccated coconut
  • 2 tbsp yogurt (Benna)
  • 1 large potato
  • 1 green apple
  • Bunch spinach
  • 4 shallots
  • 2 cloves garlic
  • 1 tbsp curry powder
  • 1 red chilli
  • 1/4 glass white wine
  • 1/2 cup fresh cream (Benna)

Method

Melt the butter and mix in the coconut than mix together with the oats, cut the salmon in 2 supremes and brush the top of the salmon with yogurt. Spread the oats crust on the salmon and bake in the oven. Using a melon baller to scoop 6 potato balls from the potato and boil. Chop the garlic, chilli and cut the shallot in quarter, sauté in salted butter until butter is browned. Add the curry, diced apple and stir, sauté for a few more minutes than add the white wine, pour in the cream and reduce by half. Mix in the spinach with the apples and serve underneath the salmon together with the sauce.
