Curried potato and chicken somosas
Serves: 8
Ingredients
- 200g finely chopped cooked chicken breast
- 1 sweet potato cooked and diced
- 2 spring onions sliced
- 1 tbsp yellow curry paste
- 1 tbsp satay sauce
- Fresh coriander chopped
- Juice of 1 lime
- Handful peas
- 1 tsp turmeric powder
- ½ tsp fresh ground ginger
- Filo pastry
- Melted butter
- Sweet chilli sauce for dipping
Method
Combine the chicken and potatoes in a mixing bowl together with the curry paste, satay sauce, coriander, lime, peas, turmeric and ginger into a paste. Cut strips of filo pastry and brush with the butter. Place a knob of filling at the bottom end of the pastry and fold to form a triangular shape. Continue overlapping and folding the pastry until you end up with a triangle and the filling is secured in. Brush the samosas with butter and bake for 15 minutes in a hot oven. Serve hot with sweet chilli dipping sauce
