Turkey and vegetable meat loaf
Serves: 6-8
Ingredients
- 5 slices streaky bacon
- 600g minced turkey breast
- 1 tbsp olive oil (Borges)
- 1 onion, diced
- 1 large zucchini, shredded
- 1 large celery stalk, finely chopped
- 3 carrots, shredded
- 1 red bell pepper, finely chopped
- 250g mushrooms, chopped
- 4 garlic cloves, minced
- 60g rolled oats
- 150g applesauce
- 2 tbsp tomato paste
- 2 tbsp chopped parsley
- 1 egg
- 1/2 tsp paprika
- 1 tsp salt
- 1 tsp black pepper
Method
Preheat the oven to 200`c. Line a large loaf baking tin with foil and lay the bacon slices on top. Heat the oil in a pan and sauté the onion until soften for 3 minutes. Add in the carrots, celery, and bell pepper, and cook for another 3 minutes to soften the vegetables. Add in the zucchini, mushrooms and garlic and sauté about 3 more minutes. In a large bowl, combine the minced turkey, oats, parsley, eggs, applesauce, tomato paste, paprika, salt and pepper. Fold in the vegetables. Transfer the mixture into the prepared tin and flatten out. Bake in the oven for roughly 35 minutes. Tip out of the baking tin onto a baking tray and remove the foil. Continue to cook for 15 minutes to brown the bacon. Remove from the oven and allow to sit for 15 minutes before serving with a crispy salad.
