Gluten-free kwarezimal
Ingredients
- 200g fine ground almonds (Lamb Brand)
- 200g roughly crushed almonds (Lamb Brand)
- 250g caster sugar (Lamb Brand)
- 100g gluten free flour (Dr. Schar)
- 3 tbsp gluten free cocoa powder
- Cinnamon, ground cloves and mixed spice
- 2 eggs
- 1 tbsp orange blossom water
- Grated zest of an orange, lemon and mandarin
- Honey to glaze
- Roasted hazelnuts, almonds and pistachios to decorate (Lamb Brand)
- Rice paper
Method
Combine the almonds with the caster sugar, gluten free flour, cocoa powder, spices, eggs and zests. Knead the mixture with the orange blossom water and enough water to form a soft dough. Line a baking tray with the rice paper. Cut dough into desired size, roll and press with your fingertips onto the rice paper to flatten slightly. Bake in a pre-heated oven temp 180°C for approximately 15 minutes until browned. Leave to cool slightly, drizzle with the honey and sprinkle with the nuts.
