Battered fish fillets with noodles
Serves: 4
Ingredients
- 4 battered fish fillets (Frosta)
- 200g mixed sea food
- Olive oil
- 2 bell peppers, cut into thin strips
- 2 leeks finely sliced
- 200 g cherry tomatoes, halved
- 4 cloves garlic sliced
- 4 tbsp balsamic vinegar
- Fresh seasoning
- 1 packet Chinese noodles
- Mayonnaise
- 2 large tortilla wraps
- Fresh salad leaves
- 1 lemon wedge
Method
Fry or bake the fish fillets, the way you prefer them. Start the stir fry; boil the noodles in plenty of salted water. Heat a generous amount of olive oil in a wok, stir in the sea food peppers, leeks, garlic and cherry tomatoes. Cook quickly for 2 minutes. Pour in the balsamic vinegar allow evaporation, season to taste. Serving suggestion 1-Serve a portion of noodles with the sliced fish, lemon wedge and side salad. Serving suggestion 2-Spread a generous amount of mayo on the tortilla wrap, place strips of the fish fillets, noodles and salad leaves. Roll and press tightly. Slice and serve with lemon wedges.
