Lamb and beef koftas with lime and ginger yogurt

Ingredients

For the lamb koftas

  • 100g exotic couscous (Sammys)
  • 1/2 onion
  • 1 tsp curry power
  • 500g lamb mince
  • 6 kebab sticks
  • 1 tbsp chopped mint

For the beef koftas

  • 100g Mediterranean couscous (Sammys)
  • 1 onion
  • 1 tsp garlic granules
  • 500g beef mince
  • 1 tsp fresh rosemary
  • 6 kebab sticks

You will also need

  • 1 tsp lime zest
  • 2 tbsp lime juice
  • 50ml yogurt
  • 1 tsp grated fresh ginger
  • 1 tsp chopped coriander
 

Method

Lamb koftas In a bowl, place100ml boiling water to the couscous and cover for 5 minutes. Chop the onion and sauté in 1 tbsp oil until softened, add to the couscous together with the mint, curry and mince. Mix well together and for the koftas pressing well the mixture. Allow to rest for 30 minutes and bake or grill until cooked through. Beef koftas In a bowl add 100ml boiling water to the couscous and cover for 5 min. Chop the onion and sauté until softened than add to the couscous. Also add the chopped rosemary, garlic, beef and mix well. Form the koftas pressing well the mix and allow to rest for 30min in the refrigerator, than grill either on pan or in oven. To make the yogurt dip, mix all the ingredients together and allow to rest for 30 minutes in the refrigerator.
