Trio of spicy chicken

Chicken fingers in spicy cheese fondue
- 6 breaded chicken fingers (Golden Foods)
- 100ml cream
- 50g Mexican cheese
Lemon and chilli chicken popcorn
- 1/2 red onion
- 2 spring onions
- 1/2 chilli
- 1 tbsp lemon zest
- 3 tbsp lemon juice
- 1 tbsp sugar
- 1 knob butter
- 2 tbsp chopped coriander
- 10 chicken popcorn (Golden Foods)
Chicken pieces on a curried onion and pineapple compote
- 1 large onion
- 2 tbsp curry powder
- 100g tinned pineapple
- 2 tbsp pineapple juice
- 6 chicken pieces (Golden Foods)
- 1 tbsp red curry paste
Method
Chicken fingers in spicy cheese fondue: In a small sauté pan melt the cheese into the cream and pour it in 6 small containers. Grill the chicken and dip one in each bowl and serve
Lemon and chilli chicken popcorn: Chop the onion, chilly, spring onion and sauté in some olive oil add sugar and zest than lemon juice and butter. Allow butter to melt remove from heat than toss in coriander and grilled chicken popcorn
Chicken pieces on a curried onion and pineapple compote: Slice the onion in thin slices and sauté on low heat in butter with the curry powder and paste, allow to brown than add chopped pineapple. Toss well than pour in the pineapple juice and reduce. Spoon the compote divided in 6 in a line on a rectangular plate and place the grilled chicken pieces on each one.
