Warm berry pudding

Ingredients

  • 125g unsalted butter, softened
  • 100g caster sugar
  • 130g self-raising flour
  • 2 eggs180ml milk
  • 180g frozen berries
  • Vanilla ice-cream for serving (Carte D`or)

Method

Combine butter, sugar, flour and eggs in a large bowl and mix with electric mixer on high speed for about 2 minutes. When smooth, stir in milk. Lightly grease a shallow pie dish with a little butter and pour in the batter. Next, sprinkle over fruit, the fruit will sink into the batter when cooking. Place in the oven at 180`c and bake for 45 minutes, keep an eye on the batter, when ready the pie should spring back slightly when touched. Remove the berry pudding from the oven and serve either hot or cold with a generous scoop of vanilla ice-cream.
