Devils on horse back with avocado salad and a honey and sesame dressing

Ingredients

  • 16 tiger prawns, tails on
  • 200g bacon
  • 1 ripe avocado
  • Salad leaves
  • 50g honey
  • 1 tbsp sesame seeds
  • ½ tsp chili
  • 1 drop of vinegar
  • Olive oil
  • Lemon

Method

Preheat griddle or barbecue, meanwhile wrap a piece of bacon with each prawn and put on four skewers. Brush the skewers with oil and lemon, and barbecue or grill. For the dressing, combine the honey, sesame seeds, chili and a drop of vinegar. Set a salad with ripe avocados and serve the skewers on top drizzled with the dressing.
