Spaghetti with fresh tomato and basil sauce

Serves:

Ingredients

  • 100g spaghetti
  • 200g tomatoes, chopped
  • 10g basil
  • 10g butter
  • 100ml vegetable stock
  • 1 onion
  • 1 clove garlic

Method

Preheat a pan and cook the onions and garlic in a little olive oil. Add in the fresh chopped tomatoes, basil and butter. Pour in the vegetable stock and bring to boil. Turn down the heat and simmer for 20 minutes. Meanwhile, cook the pasta for 7 minutes. Blitz the tomatoes sauce into a puree and mix together with the pasta.
