Couscous with sword fish and pine nuts
Serves:
Ingredients
- 100g couscous
- 50g sword fish
- 1 tbsp pine nuts
- Salt and pepper
- Olive oil
- Parsley
- 100ml fish stock
- Saffron strands
- 1 clove garlic
Method
First put the couscous in a bowl, add the salt and pepper, olive oil and mix. Cut the swordfish in cubes, and chop the garlic and parsley. In a hot pan, cook the swordfish with the garlic, add the saffron, and fish stock. When the stock starts to boil, add all this to the couscous in the bowl. Cover it and leave it to stand for 20 minutes, mixing every 4 minutes. Before serving add the pine nuts and parsley.
