Baked Mexican cheese pasta with streaky bacon and chicken cajun

Ingredients
- 100g penne pasta (Pasta Zara)
- 80g Mexican cheese
- 6 slices streaky bacon
- ¾ cup cream (Elmlea)
- 1 egg
- 150g chicken breast
- 1 tsp cajun spice
- ½ red onion
- 1 knob butter
Method
Dilute the cheese in the cream, boil the pasta toss in the cream add egg and mix well. Line 2 round moulds with bacon put pasta in the middle and bake at 180 degrees celcius until the top in browned and crispy. Remove from ovenand allow to rest. Cut the chicken in strips mix the spices well and in a very well preheated pan saute the chicken, when half cooked and the fine sliced onion too. Toss until cooked and serve on the pasta cake.
