Curried rice with pork, prunes, dates and figs

Ingredients

  • 100g rice
  • 30g mild curry
  • 100g pork loin
  • 10g prunes
  • 10g dates
  • 10g dried figs
  • 1 orange
  • 1 apple
  • 100ml white whine
  • 200ml chicken stock
  • 50ml cream
  • 1 onion
  • 2 cloves garlic

Method

Preheat pan with some olive oil. Add the rice stir fry for 2 minutes. Add the mild curry and stir for 3 minutes. Pour in the white wine and reduce by half before adding the chicken stock and reduce till the rice cooked. In a separate pan stir-fry the pork the finely chopped onions and garlic cook for 5 minutes .Add the chopped dates, prunes and figs cook for 2 minutes. Stir the mixture into the rice and finally add the cream and serve.
