Sun-dried tomato, olive and capper fritters

Ingredients

  • 500g flour
  • 12g yeast
  • 15g salt
  • ½ tsp sugar
  • Chopped sundried tomato, olives and capers (Camel Brand)
  • Fresh mint
  • 300ml warm water

Method

Beat the flour with the yeast, salt and sugar with the warm water. Stir in the chopped items and the mint leaves. Cover the batter and allow resting for 20 minutes in a warm place until double in bulk. Cut the batter into small pieces and deep fry in hot oil until golden and crispy.
