Warm chicken and chorizo sausage salad

Ingredients

  • 1 chorizo sausage, cut into slices
  • 2 chicken breasts, cut into 1 inch pieces
  • 1 tbsp dried tarragon
  • 2 cloves garlic, chopped
  • 2 tbsp olive oil

For the salad

  • 1 handful rucola leaves
  • 100g garlic croutons
  • 3 tbsp light mayonnaise
  • 1 tbsp white wine vinegar
  • 1 tbsp tarragon
  • Fresh seasoning

Method

In a large bowl, mix together the garlic, olive oil and tarragon. Add the chicken pieces and leave to infuse for 30 minutes. When ready, heat a large pan and cook the chicken and chorizo pieces separately till brown and crispy. Quickly prepare the salad by mixing together the mayonnaise, vinegar and tarragon in a large bowl. Add the rucola leaves, garlic croutons, cooked chicken and chorizo pieces and mix well. Season well before serving into large salad bowls.

Insalata taz-zalzett chorizo u t-tiġieg

Ingredients

  • 1 zalzett chorizo, mqatta’
  • 2 isdra tat-tiġieġ, imqattgħa f’biċċiet ta’ pulzier
  • 1 mgħarfa tarragon niexef
  • 2 sinniet tewm, imqatta’
  • 2 mgħaref żejt taż-żebbuġa

Għall-insalata

  • 1 ponn weraq tal-aruka
  • 100g dadi tal-ħobż tat-tewm mixwi
  • 3 mgħaref mayonnaise light
  • 1 mgħarfa ħall tal-inbid abjad
  • 1 mgħarfa tarragon
  • ħwawar friski

Method

Fi skutella kbira, ħallat flimkien it-tewm, iż-żejt taż-żebbuġa u t-tarragon. Żid il-biċċiet tat-tiġieġ u ħallihom jimmarinaw għal nofs siegħa. Imbagħad, saħħan taġen kbir u sajjar it-tiġieġ u l-biċċiet taċ-chorizo separatament sakemm jiħmaru u jiġu jqarmċu. Ipprepara l-insalata billi fi skutella kbira tħallat flimkien il-mayonnaise, il-ħall u t-tarragon. Żid l-aruka, id-dadi tal-ħobż, il-biċċiet tat-tiġieġ u ċ-chorizo u ħawwad tajjeb. Ħawwar qabel isservi.
