Diabetic chicken spaghetti puttanesca

Ingredients
- 1 large onion, finely chopped
- 4 cloves garlic, crushed
- 2 tbsp olive oil (Prego)
- 2 chicken breasts, sliced
- 20 cherry tomatoes, halved
- 150g sliced black olives
- 1 tin (400g) tomato polpa (Prego)
- ½ tsp chilli flakes
- 1 tsp dried oregano
- 10 basil leaves
- 2 tbsp chopped parsley
- fresh seasoning
- 400g diabetic spaghetti (Fiber pasta)
- grated Parmesan cheese for serving
Method
Start by heating a large pan of boiling salted water and cook the diabetic pasta while you prepare the sauce. Heat the oil in a large frying pan, and soften the onion and garlic together for 5 minutes. Add in the sprigs sliced chicken pieces and brown them all over for a few minutes. Next, add the oregano, chilli flakes, sliced black olives, cherry tomatoes and polpa to the pan. Season well with salt and pepper, mix well and simmer for about 10-15 minutes to cook the cook and reduce the sauce. Just before serving the pasta, chop up the fresh basil and add it to the sauce along with the chopped parsley. Throw in the cooked diabetic pasta and mix well till the spaghetti is completely covered in the sauce. Serve the chicken spaghetti puttanesca sprinkled with Parmesan.

- 2 mgħaref żejt taż-żebbuġa (Prego)
- 2 isdra tat-tiġieġ, imqattgħin strixxi
- 20 tadama ċirasa, maqsumin min-nofs
- 150g żebbuġ iswed, imqatta’
- 400g polpa tat-tadam tal-bott (Prego)
- ½ kuċċarina frak tal-filfel
- kuċċarina riegnu niexef
- 10 werqiet ħabaq
- 2 mgħaref tursin, imqatta’
- ħwawar friski
- 400g spagetti tad-dijabete (għaġin ismar)
- ġobon Parmeġġan maħkuk biex isservi
Method
Għalli l-għaġin f’borma kbira bil-misħun u ftit melħ. Sadattant, lesti z-zalza. Saħħan iż-żejt f’taġen kbir u qalli l-basla u t-tewm flimkien għal 5 minuti. Żid il-biċċiet tat-tiġieġ u sajjarhom għal ftit minuti sakemm jiħmaru. Imbagħad żid ir-riegnu, il-frak tal-filfel, iż-żebbuġ iswed imqatta’, it-tadam u l-polpa. Ħawwar bil-bżar u l-melħ, ħawwad sew u ħallih itektek minn 10 minuti sa kwarta sakemm tagħqad iz-zalza. Qabel ma se sservi, qatta’ l-weraq tal-ħabaq u żidu maz-zalza flimkien mat-tursin imqatta’. Itfa’ l-għaġin fit-taġen u ħawwad tajjeb sakemm l-ispagetti jinkesa sew biz-zalza. Servi l-għaġin bil-ġobon Parmeġġan maħkuk fil-wiċċ.
