Wholemeal fajita chicken and chorizo stack

Ingredients

  • 170g thinly sliced chorizo salami
  • 300g chicken breast
  • 1 tsp smoked paprika
  • 1tsp ground cumin
  • 1 tbsp oil
  • juice of a lime
  • 415g tin re-fried Beans
  • 1 red onion, finely chopped
  • 2 tbsp chopped coriander
  • 200ml sour cream
  • 270g jar Salsa
  • 8 Wholemeal tortillas

Method

Start by mixing together the smoked paprika and cumin. Use to coat the whole chicken breast and put to one side. Heat the oil in a pan and put in the spiced chicken, the juice of the lime, and fry until the chicken is cooked. When ready, remove from the pan and leave to cool before slicing up the chicken thinly. Next, mix together the re-fried beans, raw onion and coriander. You can now start putting the dish together. Put 1 wholemeal tortilla on a serving plate and spread with sour cream. Continue to spread 1/3 of the bean mixture on top. Place the second tortilla on top and press down. Spread on a thin layer of salsa, and then arrange ½ of the spiced chicken on top. Put the third tortilla on top and press down again. Spread on another thin layer of salsa, and then arrange ½ chorizo salami on top. Repeat this whole process again, finally covering the stack with the last tortilla. Press down well, cover tightly with cling film, and chill for at least 2 hours. Serve the tortilla stack cut up into thick wedges.

  • mgħarfa żejt
  • il-meraq ta’ lime
  • bott (415g) re-fried beans
  • basla ħamra, imqattgħa rqiq
  • 2 kuċċarini kosbor, mitħun
  • 200ml krema qarsa
  • vażett salsa (270g)
  • 8 tortillas wholemeal

Method

Ħallat il-paprika u l-kemmun flimkien u uża din it-taħlita biex tiksi s-sider tat-tiġieġa. F’taġen, saħħan iż-żejt, itfa’ t-tiġieġa mħawra u l-meraq tal-lime, u aqli. Meta t-tiġieġa tkun saret, neħħiha mit-taġen u ħalliha tiksaħ qabel tqattagħha fi strixxi rqaq. Imbagħad ħallat flimkien ir-re-fried beans, il-basla u l-kosbor. Ibda lesti l-platt – poġġi tortilla fuq il-platt li tkun se sservi fih, idlikha bil-krema qarsa u itfa’ 1/3 mit-taħlita tal-fażola fuqha. Imbagħad poġġi t-tieni tortilla u agħfas ’l isfel. Agħmel saff irqiq salsa, imbagħad poġġi nofs il-biċċiet imħawra tat-tiġieġ. Poġġi t-tielet tortilla u erġa’ agħfas ’l isfel. Itfa’ saff ieħor salsa u nofs il-biċċiet tas-salami fil-wiċċ. Erġa’ rrepeti l-proċess kollu, u agħlaq bl-aħħar tortilla fil-wiċċ. Agħfas ’l isfel u għatti bil-cling film. Kessaħ fil-friġġ għal mill-inqas sagħtejn.
