Crunchy vegetable stir-fry with peanut sauce

Ingredients

For the stir-fry
  • 2 tbsp vegetable oil
  • 1 large onion, sliced
  • 2 tsp minced garlic and ginger paste
  • 1 red chilli, sliced – optional
  • 1 carrot, peeled and sliced
  • 1 handful broccoli florets
  • 10 baby sweet corn, cut in half
  • 1 spring onion, thinly sliced
  • 2 tbsp chopped roasted peanuts
  • 200g cooked noodles
For the peanut sauce
  • 2 tbsp crunchy peanut butter (Tesco)
  • 2 tbsp soy sauce (Tesco)
  • 1 tsp minced garlic and ginger paste (Tesco)
  • 250ml coconut milk (Tesco)
  • 1 tbsp honey (Tesco)
  • 1 tsp sesame oil

Method

Start by placing all the peanut sauce ingredients together in a saucepan and cook together for 3 minutes. In a large pan or wok, heat the oil and quickly flash fry the onion and chilli if using for 1 minute. Add in the minced garlic and ginger paste, along with the sliced carrot and broccoli and cook for 2 minutes. Add in the baby sweet corn and cook for 1 minute. Stir in the prepared peanut sauce, cooked noodles and heat together, coating all the ingredients with the peanut sauce. Serve immediately garnished with the sliced spring onion and chopped peanuts.

  • 2 mgħaref butir tal-karawett
  • 2 mgħaref zalza tas-sojja
  • Kuċċarina pejst tat-tewm u l-ġinġer
  • 250ml ħalib tal-coconut
  • mgħafa għasel
  • kuċċarina żejt tal-ġulġlien
