Sirloin steak with onion marmalade and feta cheese couscous muffins

Ingredients

  • 600g sirloin steak (Vini e Capricci)
  • 300g cooked mushroom couscous (Ainsley Hariott)
  • 80g feta cheese
  • 2 beaten eggs
  • 2 tbsp sunflower seeds
  • 2 red medium onions
  • 3 tbsp sugar
  • 2 tbsp balsamic vinegar (Borges)
  • 50g salted butter
  • 1 bottle Double Malt Beer (Talbot & Bons)
  • bunch rocket
  • 2 tbsp Parmesan cheese shavings

Method

In a bowl mix the couscous feta and beaten eggs, divide the couscous mix in muffin silicone moulds, sprinkle with sunflower seeds on top and bake at 180 degrees Celsius until browned. on a well pre heated griddle pan grill the steak to your liking and allow to rest for one minute before serving to allow beef to rest and drain extra juices. slice the onion and sauté in butter and sugar until caramelized, add the balsamic beer and reduce until a marmalade consistency. Serve with the marmalade on the side and rocket and Parmesan on top.
