Walnut and banana bread

Ingredients

For the cake
225g Unsalted butter (Lake land )
215g Light brown sugar (Lamb brand)
2 Eggs, beaten (Coccodi)
5 Ripe medium bananas (4 mashed, 1 whole)
120g Plain yogurt
1 tsp Vanilla extract
300g Self-raising flour
1 tsp Baking powder
Good pinch salt
125g Broken walnuts (Lamb brand)
To decorate
100g Cream cheese (Emborg)
300g Icing sugar
100g unsalted butter, softened (Lake land)
1 tsp vanilla extract
2 tsb chocolate chips ( Lamb brand)

 

Method

Grease and line a 9 inch loaf tin. Place the softened butter and sugar together until light, then stir in the eggs, mashed bananas, vanilla and yogurt. Mix together the self-raising flour, baking powder and salt and stir in, along with the walnuts. Spoon into prepared tin, slice the remaining banana in half and place onto the top. Bake in the oven at 170`c for 1hour /1hour 15 minutes. Allow to cool down in the tin before removing out of the tin. For the cream cheese frosting, beat together the vanilla and butter till light then stir in the icing sugar. Finally mix in the cream cheese and spread over the top of the banana bread. Sprinkle over the chocolate chips and serve.
