Salmon en croute with cream cheese and spinach

Ingredients
- 1 large piece whole salmon, skin off (approximately 600-700g)
- 1 tsp finely grated orange zest
- 300g frozen spinach leaves, defrosted and squeezed (Emborg)
- 150g cream cheese (Emborg)
- Good pinch grated nutmeg
- 1 tbsp chopped fresh dill
- 3 spring onions, sliced and cooked
- 300g puff pastry
- 1 egg, beaten
- 1 tbsp sesame seeds
- You will also need cooked asparagus and zucchini for serving
Method
Start this recipe by mixing together the spinach, spring onions, cream cheese, dill and nutmeg and put aside. Next, rub the orange zest over the salmon and season well with salt and pepper and sear in a pan just to colour on both sides. Allow to cool down. Roll out the puff pastry and glaze with beaten egg. Place the salmon on top on one side and spoon the spinach mixture on top. Fold the remaining pastry over the top and seal the edges together, cutting off any excess. Place onto a baking sheet lined with non stick paper and glaze all over with more beaten egg. Sprinkle with sesame seeds and bake in the oven at 200`c for 35-40 minutes. Serve whole on a large board with the roasted asparagus and zucchini.
